5 Spring Gin Cocktails to Make with Hector's This Season
5 September 2026Spring on the coast means one thing at Hector's HQ: it's time to swap the winter martini for something with a bit more theatre. The days are stretching out, the garden's waking up, and our botanicals; sea kelp, manuka, thyme, lavender, lemon myrtle are built for exactly this kind of experimenting.
This season we're not doing simple gin and tonics. We're doing colour-shifting spritzes, native botanical fizzes, and cocktails with a bit of smoke and theatre to them. Here are five spring gin cocktails worth adding to your rotation, each one built to be a moment that celebrates the New Zealand spring weather and not just a drink.
1. Cherry Blossom & Sea Salt G&T
A softer, prettier take on the classic G&T, built around a homemade cherry blossom syrup inspired by the garden city and a salted rim that plays against the Platinum Ink Gin’s herbal backbone.
You'll need:
- 50ml Hector's Platinum Ink Gin
- 15ml cherry blossom syrup (or cherry blossom tea, steeped strong and cooled)
- 100ml tonic water
- Flaky sea salt, for the rim
- Fresh or dried edible cherry blossoms (or rose petals as a substitute)
- Ice
Method:
Wet half the rim of a coupe or wine glass and press it into flaky sea salt. Add ice, pour in the gin and cherry blossom syrup, and stir once to combine. Top slowly with tonic so it doesn't overflow the salted rim, and finish with a scattering of blossoms across the top.
2. Kawakawa & Grapefruit Fizz
Kawakawa is one of Aotearoa's most distinctive native botanicals; peppery, slightly bitter, a little medicinal in the best way. Paired with grapefruit and tonic, it makes for a genuinely uniquely NZ spring pour.
You'll need:
- 45ml Hector's Premium Dry Gin
- 20ml fresh grapefruit juice
- 15ml kawakawa syrup (kawakawa leaves steeped in hot sugar syrup, strained and cooled; most NZ specialty grocers or health stores stock kawakawa cordial as a shortcut)
- Soda water to top
- A twist of grapefruit peel
Method:
Dry-shake the gin, grapefruit juice, kawakawa syrup, without ice, for 15 seconds. Add ice and shake again until well chilled. Strain into a coupe, top with a splash of soda, and finish with the grapefruit twist.
3. Smoked Rosemary Bee's Knees
A honeyed classic given a spring makeover with lavender and a quick smoke of rosemary over the glass before serving; all theatre, minimal effort.
You'll need:
- 50ml Hector's Premium Dry Gin
- 20ml fresh lemon juice
- 15ml lavender-honey syrup (manuka honey and dried culinary lavender, warmed together and strained)
- A sprig of fresh rosemary
- A kitchen torch or long match (optional, for the smoke effect)
Method:
Shake the gin, lemon juice, and lavender-honey syrup hard with ice, then double-strain into a chilled coupe. If you're going for the theatre, invert a rocks glass over the rosemary sprig, torch it briefly to release smoke, then trap it under the glass for a few seconds before releasing over the drink. Garnish with the smoked rosemary.
4. Platinum Ink Butterfly Garden Spritz
The showstopper of the lineup. Built on the Platinum Ink Gin, this one starts deep ink blue and shifts to a vivid, saturated pink the moment citrus or tonic hits it, real butterfly pea chemistry, layered with elderflower and fresh spring herbs for extra depth.
You'll need:
- 40ml Hector's Platinum Ink Gin
- 15ml elderflower liqueur
- 30ml Prosecco
- Top with tonic water
- A few sprigs of fresh mint and thyme
- Edible flowers or a lemon wheel to garnish
- Ice
Method:
Build over ice, pouring the gin and elderflower liqueur in first so the glass starts deep blue. Add the herbs, then pour the tonic and prosecco slowly down the side of the glass and watch the colour bloom from blue to pink as it mixes. Finish with edible flowers for a proper spring garden look.
5. Blood Orange & Manuka Smoked Negroni
A bolder, more grown-up pour for anyone who wants their spring cocktail with a bit of weight to it. Blood orange brings brightness, while a smoked manuka honey gives it depth without overpowering the botanicals.
You'll need:
- 30ml Hector's Premium Dry Gin (or Platinum Ink, for a colour-shift twist as it's stirred)
- 30ml sweet vermouth
- 30ml Campari
- 5g Smoked Manuka Honey (We love Honey By The Sea Manuka Cold Smoked Honey Comb)
- A blood orange wheel and twist
Method:
Stir the gin, vermouth, honey and Campari over ice until silky and well chilled. Garnish with the blood orange wheel and express the twist over the top.
